Collected from the golden fields of the Oilseed Rape (Brassica napus) flower in the spring to produce this white honey with a creamy texture and light, very mild taste. Popular even with those who think they don’t like honey!
Due to the unique mix of sugars in Oilseed Rape honey it crystalises very quickly (normally within ten days), and sets very hard. To prevent this happening whilst the honey is still in the comb we take the honey off the hives as soon as the Oilseed Rape flowers start to fade and after 24 hours in the warming room extract the honey immediately. After filtering out any bits of beeswax the honey is put into drums and left in a cool room for a couple of weeks to set. By setting, the honey has formed a very small, tightly packed crystalline lattice that is so hard it is almost impossible even to get a knife through it. The drums are then very gently warmed so the honey can be transferred to the creaming machine. This will gently stir the honey for 48 hours so that the mechanical action of crystals rubbing against each other results in a creamy, smooth honey that will retain this texture indefinitely.
Delicious spread over hot toast, crumpets or oat cakes.
